You'd think that after the Titanic, popularity for cruise ships would've gone down like well, the Titanic. Despite this, they continue to be big business, with each ship providing employment for hundreds of people. This is because, in addition to having all the staff required to operate a large boat navigators, communications officers, engineers and so forth they also have all the staff required to operate a large hotel. So, everyone from musicians to receptionists, via lifeguards (at the swimming pool) and gourmet chefs can find work on a cruise ship.
Obviously the major downside to working on a cruise ship is that you will be spending a considerable amount of time away from home: Up to several weeks depending on the length of your cruise. This is great of you want to see the world (most ships stop off at a few places, giving allowing the passengers to do some sightseeing and giving the crew time for a bit of shore leave) but not so good if you'd prefer not to be away from your family for extended periods of time.
